
Our Spring Blend Is Here
Every season we put together a limited blend that reflects what is tasting best from our current inventory. The spring blend just landed, and we are genuinely excited about this one.
What Is in It
This year's spring blend is a three-origin mix:
- 40% Colombia, Huila region, Washed, from a cooperative at 1,750 metres. This is the backbone. It brings caramel sweetness, a smooth body, and a mild citrus acidity that keeps things lively without being sharp.
- 35% Ethiopia, Sidamo, Washed, from a small washing station near Bensa at 2,000 metres. This adds floral complexity. Think honeysuckle and ripe peach. It is the aromatic engine of the blend.
- 25% Guatemala, Huehuetenango, Washed, from a single farm at 1,600 metres. This rounds out the bottom end with milk chocolate, brown sugar, and a touch of toasted almond. It gives the blend its finish.
Why These Origins
Blending is about balance. We wanted something that tastes like spring feels: bright and warm but not aggressive. The Colombian base provides structure. The Ethiopian lifts the aroma. The Guatemalan smooths the landing. Each coffee is good on its own, but together they do something none of them can do alone.
We roasted this to a medium level, just past first crack with about 15% development time. Any lighter and the Guatemalan component gets grassy. Any darker and the Ethiopian florals burn off. The sweet spot is narrow, which is part of what makes seasonal blends interesting to develop.
How to Brew It
This blend works well across methods, but it shines as a pour-over. The clarity of a V60 or Kalita Wave lets you pick out the individual components. At a 1:16 ratio with water at 94 degrees Celsius, you will get a cup that opens with floral aromatics, settles into caramel sweetness, and finishes clean with a whisper of chocolate.
It also makes a solid espresso. Pull it at a 1:2 ratio (18 grams in, 36 grams out) in about 28 seconds. The shot will be sweet and balanced with enough body for milk drinks.
